Happy February! I decided to start off this month with a dish from one of the most romantic places in the world: Gnocchi from Italy! It just seemed fitting :] The word gnocchi means "lumps", and I would best describe this dish as dumplings in a creamy parmesan cheese sauce. I like to add some sort of vegetable to it and serve it with bread to balance the overall plate. It's a great appetizer but it is filling!

Mis en Place

  • 2 potatoes, cut in half and peeled
  • 1/4 cup egg, lightly beaten
  • 1 cup of unbleached all-purpose flour
  • Salt to taste
  • Garlic or Garlic powder to taste
  • 1/2 pint heavy whipping cream
  • 1/2 cup parmesan cheese
  • 1/s cup spinach
Preparation

Step 1: The Dough
Fill a large pot with water and add salt. Place the potatoes in the pot once the water has come to a boil and cook until the potatoes are tender throughout.
