Aileen and I came home late from a long day of running errands and taking care of things we normally don't have time to take care of on the weekdays, so we needed something light and quick to make since neither of us had the energy to stay standing much longer! Not to mention that our whole kitchen seemed a bit bare... Grocery shopping was not on our list of errands today (apparently!) So we just had to use what we had around, which ended up to be fine! Not to mention, that this is another lent-friendly/meatless Friday recipe that you can have at any time of the day as an appetizer or snack, and you most likely have the ingredients in your kitchen already!

Chef Tony Perez - Herb Tofu and Sun Dried Tomato Crostini
Mis en Place:
  • 2 tsp extra-virgin olive oil
  • 1 tsp cup fresh lemon juice
  • 1 tbsp flax seed
  • 1/4 cup chives, diced
  • 1 tbsp minced garlic
  • 1 tbsp Italian herb spices
  • 1/4 cup sun dried tomatoes, diced
  • salt + pepper to taste
  • 1/2 cup extra firm tofu, small dice
  • 1/2 of a French baguette, sliced (yields approx. 12 crostinis)
  • 2 tbsp butter
  • 1 tbsp garlic powder
Preparation

The Tofu
Heat up a saute pan on medium-high heat. Put 1tbsp of olive oil on the pan and add your garlic once the pan is hot. When you can really start to smell the garlic cooking (shouldn't be longer than a minute or so), add your tofu seasoned with salt, pepper, and Italian herbs. Cook until tofu has a bit more color -- should be slightly golden, not brown.

The Crostini
Slice your baguette into 2 inch square pieces -- this should yield about 12 crostinis. Mix your butter and garlic powder in a bowl, and spread on top 1 side of each crostini. Toast each bread on a comal until they are slightly crunchy (approx 1 minute on each side). You can also just throw each bread piece in the oven directly on top of the rack, or a toaster oven, but the comal wil have to do for us right now!

The Topping
In a separate bowl, mix your flax seed, chives, sun-dried tomatoes, 1 tsp of olive oil, lemon juice, and sauteed tofu. Place the topping on top of each crostini, and serve hot or cold! Late snack for two =]
