I'm doing better than I thought! Not eating meat for 40 days sounds pretty hard, but it's allowed me to get more creative with the way I prepare sauces and vegetables, as well as opt for the veggie menu when we go out to eat! Here's to day 5 of lent: Grilled Salmon! I created the sauce from a lemon-juice, thickened with butter and topped with dill. Simple enough, healthy and delicious! And pretty easy on the eye if I do say so myself ;]
